Kerak telor is made to order in a small wok. Glutinous rice is cooked with duck or chicken egg, then the pan is turned upside down over the coals so the top crisps. It is finished with serundeng (toasted spiced coconut), fried shallots and dried shrimp.
Vendors carry their kit on a shoulder pole. They are most often seen around Kota Tua, Monas and at the annual Jakarta Fair.
Why it matters
It is one of the few dishes that is distinctly Betawi — the culture of Jakarta's original inhabitants.
