Rawon gets its striking black colour and earthy, nutty flavour from keluak, the fermented seed of the kepayang tree. Beef is simmered in the broth with garlic, shallot, galangal and turmeric.
It is served with rice, bean sprouts, salted egg, crackers and sambal, and is especially loved in Surabaya.
