
Traditional grilled beef from West Java, marinated before it meets the charcoal and eaten without peanut sauce.
Sate maranggi is the satay of the Sundanese highlands around Purwakarta and Cianjur. Cubes of beef — sometimes goat — are steeped in a marinade of sweet soy, coriander, palm sugar and other spices before grilling, so the flavour is already in the meat.
It is served simply: skewers straight from the grill with rice or grilled sticky rice, and a fresh sambal of tomato, chilli and shallot instead of the peanut sauce found elsewhere.

It shows how much satay changes from one region to the next — and it is the dish travellers on the road between Jakarta and Bandung stop for.
